柠檬叶(kaffir lime leaves)
材料 Ingredients:
米粉(rice vermicelli) ...... 250g(wash in running water until softened, drain in sieve)
(A)
葱头仔(shallots) ...... 150g
马来煎(balacan) ...... 1块(15g)
姜(ginger)...... 1块
香茅(lemongrass) ...... 1~2支
将材料切小块,加入适量的水,用搅拌机打成泥。
Cut all ingredients into small pieces, put into a food processor, add water and blend into paste.

自制辣椒酱(chili paste) ...... 4~5 tbs
黄姜(fresh turmeric, sliced)...... 1小块切片
柠檬叶(kaffir lime leaves) ...... 5~6片
小辣椒(chili padi ) ...... 2~3 条
配料 Ingredients:
包菜(cabbage, shredded)...... 切丝
红萝卜(carrot, shredded)...... 切丝
调味料 Seasoning:
糖(sugar)...... 2 tbs盐(salt)...... 2 tsp
做法 Methods:
1)热锅加油,放入包菜丝和红萝卜丝,翻炒约1~2分钟,起锅,放一旁待用。
Heat a wok and add 2 tablespoon of cooking oil.
Add shredded cabbage and shredded carrot, stir-fry for 1~2 minute until vegetables are tender crisp.
Remove and set aside
2)加适量油,爆香黄姜和柠檬叶。加(A)酱料,翻炒。
Add 5 tablespoon of cooking oil.
Add turmeric and kaffir lime leaves. Stir-fry till fragrant.
Add shallot paste (A).
Stir-fry for another 2~3 minutes.
3)加辣椒酱,炒至到酱料发出香味和渗出辣椒油(Tumis)
Add in chili paste, stir-fry until the paste begins to release its fragrant aromas and the oil starts to oozes out.
4)加入水,加入调味料2)加适量油,爆香黄姜和柠檬叶。加(A)酱料,翻炒。

5)加入米粉,炒至均匀。
Add rice vermicelli and stir well.

7)起锅。
Dish up and garnish with shredded kaffir lime leaves.
小贴士 Tips:
1)嘉嘉用的是泰国米粉,很容易软,所以不用浸泡,只要冲洗干净,沥干即可。
3)香茅和姜比较难打烂,要视使用的搅拌机。可以先用干磨的方式磨细,再和其他材料一起搅拌。
4)嘉嘉用的自制辣椒酱,已经加了小辣椒,所以就没再加。如果喜欢吃辣,小辣椒切开,和黄姜,柠檬叶一起爆香。
5)翻炒酱料时,油要稍微多一点,否则容易烧焦和粘锅。也不用一次过放太多油,只要翻炒时发现稍微粘锅,再加适量的油。
